Stir-Fried Tofu and Vegetable Medley

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 2 tablespoons sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon grated fresh ginger
  • 2 cloves of garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium zucchini, halved and sliced
  • 1 cup sugar snap peas
  • 1 cup sliced mushrooms (such as cremini or shiitake)
  • 2 green onions, sliced
  • 2 tablespoons sesame seeds (optional)
  • Salt and pepper to taste


  1. In a bowl, combine the cubed tofu, soy sauce, sesame oil, cornstarch, grated ginger, and minced garlic. Toss gently to ensure the tofu is well coated. Let it marinate for about 10-15 minutes.
  2. Heat a tablespoon of sesame oil in a large skillet or wok over medium-high heat on your Wiggo hob. Add the marinated tofu cubes and cook for 5-6 minutes, stirring occasionally, until golden brown and slightly crispy. Remove the tofu from the skillet and set it aside.

  4. Return the cooked tofu to the skillet with the vegetables. Add the sliced green onions and season with salt and pepper to taste. Stir-fry for an additional 2-3 minutes to heat everything through and allow the flavors to meld.
